Asparagus Pesto with Gnocchi

Presto
      1 bunch asparagus spears (about 1 lb), trimmed of rought ends and halv croswise
      3 bunches baby spinach, trimmed
      2 cloves garlic, peeled
      1 cu Parmesan chesse
      1 cup pine nuts
      1/4 cup extra-virgin olive oil
      1/2 each lemon, juiced
      1/2 teaspoon salt
Gnocchi
      2 pounds bakin poatoes
      1 teaspoon bking powder
      1 each egg white
      1 1/2 cups flour, AP


I've never used gnocchi before. This is my first time cooking it. This dish is very good and healthy. The color of the dish is beautiful.

Eggplant Parmesane

Eggplant
2lbs. globe eggplant (2 medium eggplants), cut crosswise into 1/4-inch-thick rounds
1 tablspoon kosher salt
8 slices high-quality white bread (about 8 ounces)
Table salt and ground black pepper
1 cup unbleached all-purpose flour
4 large eggs
6tablespoons vegetable oil
Tomato Sauce
3 cans (14 1/2 ounces each)diced tomatoes
2 tablespoon extra-virgin olive oil
4 cloves medium garlic, minced or pressed through garli press (about 1 generous tablespoon)
1/4 teaspoon red pepper flakes
1/2 cup fresh basl leaves chopped
Table salt and ground black pepper
8 ounces whole milk
Mozzarella or part-skim mozzarella, shredded (2 cups)
1/2 cup grted Parmesan cheese (about 1 ounce)
10 fresh basil leaves torm, for garnish


The eggplant came out to be really moist and the sauce was delicious. The colors and the texture of the dish came out to be as expected.

Zucchini And Porcini Risotto

1/2 lb. zucchini
salt, to taste
1/4 ounce dried porcini mushrooms
1/4 pound plum tomatoes
1 clove garlic, peeled
1 stalk celery, minced
1 tablespoon parsley, chopped
1/4 cup butter
3 cups short-grain rice, Vialone nano or Arborio
1 cup dry white wine
2 tablespoon chives, minced
1 tablespoon mint leaves, torn

Pommes Frites With Parsley Butter

Recipe:

pommes frites
     8 each medium Idaho potatoes, peeled
     Sea salt, as needed

parsley butter
     1/2 cup butter, cut in pieces
     1/4 cup parsley, chopped
     2 cloves garlic, minced



Before the exercise I used to fry the potatoes only once. After exercise I learned that potatoes need to be cooked in 275F for 3 minutes and 375F for 2 minutes. By using this method the potatoes are cook from the inside and in a brownish color outside. I like this method better than the method that I used before.
